Crock Pot Chili

Ingredients
  

Meats
  • 2 lbs Bacon cooked and chopped
  • 1 lb Mild Italian Sausage browned, chopped, and drained
  • 1 lb Ground Beef browned, chopped, and drained
Seasonings
  • 4 tbsp Chili Powder
  • 1 tbsp Dried Oregano
  • 2 tsp Cumin
  • 1 tsp Dried Basil
  • 1 tsp Seasoned Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Paprika
Vegetables
  • 1 Red Bell Pepper finely diced
  • 1 Green Bell Pepper finely diced
  • 1/2 cup Celery finely diced
  • 1/4 cup Yellow Onion finely diced
  • 1 tbsp Galic minced
  • 6 oz Tomato Paste
Other Ingredients
  • 48 oz Chili Beans in Mild Chili Sauce not drained
  • 56 oz Petite Diced Tomatoes not drained
  • 1 1/2 tbsp Granulated Sugar
  • 4 tbsp Dark Brown Sugar
  • 1 tbsp Worcestershire Sauce
  • 3 tsp Beef Bouillon Paste
  • 1 tbs Bacon Grease

Method
 

Meats
  1. Brown, drain, and dice all meats. Be sure to brown the sausage and ground beef until it has a nice sear, this adds lots of flavor! Reserve bacon grease to cook vegetables.
Vegetables
  1. Sauté peppers, celery, onion, and garlic in bacon grease in a large cast iron skillet over medium heat while stirring occasionally until tender, about 5-8 minutes. Add seasonings and tomato paste and cook an additional 1-3 minutes.
Assemble In Crock Pot
  1. Add, meats, cooked vegetable and seasoning mixture, chili beans with liquid, diced tomatoes with liquid, sugar, brown sugar, Worcestershire sauce, and beef bouillon to crock pot. Cook on high heat for at least 4 hours to let the flavors come together. Can also be cooked on low for 6- 8 hours for more flavor.
